Simple, Healthy Oven Baked Home Fries

These delicious home fries (hash browns) are simply made by cutting up potatoes into cubes, adding seasonings, and baking on a sheet pan in the oven! My kids love these oven baked home fries and are a Saturday morning weekly tradition!

Ingredients
  

  • 6 Russet Potato
  • 1 tbsp seasoning salt
  • 2 tsp Paprika
  • 2 tsp garlic powder
  • 1-2 tsp salt & pepper, to taste
  • 1/2 tsp cayenne pepper (optional)

Instructions
 

  • (Optional) - If you have time, soak potatoes for at least 15 minutes and wring the potatoes dry as possible with a kitchen towel. This will help remove the starch and produce crispier home fries.
  • Preheat oven to 425F. You can go up to 450F if using avocado oil, avocado oil spray, or ghee.
  • Wash potatoes and cut them into 1" cubes (a potato cutter is a great time saver!).
  • Season potatoes with seasonings and avocado oil spray or avocado oil/extra virgin olive oil in a bowl.
  • Put seasoned potatoes in a single layer on a greased pan and bake at 425F for 15 minutes and then flip potatos. Bake another 15 minutes or until desired crispiness.
  • Optional, but transfer to a bowl and mix in parsley and extra salt if needed.
