Reading my blog, you will constantly hear me say how much I love hosting get togethers with friends and families and the reason why is, I love to cook for my guests. I love to prepare foods that makes my guests wanting more. So I’m always looking for great appetizers to share with them. This stuffed mushroom appetizer, I made when I hosted a house warming party when my partner and I moved into our new place last year! It complimented all the other food I served. I made it again this year at my first annual holiday get together with friends! These mushrooms just melt in your mouth!
The right amount of cheese and seasonings! They kept my guests happy and their bellies full.
Preheat the oven to 400 degrees F.
Stir the bread crumbs, Pecorino Romano, garlic, parsley, mint, salt and pepper, to taste, and 2 tablespoons olive oil in a medium bowl to blend.
Drizzle a heavy large baking sheet with about 1 tablespoon olive oil, to coat. Spoon the filling into the mushroom cavities and arrange on the baking sheet, cavity side up. Drizzle remaining oil over the filling in each mushroom. Bake until the mushrooms are tender and the filling is heated through and golden on top, about 25 minutes. Serve.
