Apple Plum Crisp
One beautiful Saturday afternoon in October I went apple and pumpkin picking with my partner and his family and friends. We went to a quaint little place in upstate New York in Hudson called FixFarm. We brought are “son”, our 1 year old maltipoo Oreo with us. We had so much fun hanging out with family and friends picking (and eating) some delicious apples! We brought home some of the favorite apples we tried and some beautiful pumpkins to decorate our home for the fall! A few days later my Dear friend Stephen gave me a bunch of plums! So I did some research for something I could make that I could incorporate both the apples and the plums! I found this wow! Inducing recipe on pinterest and added my own twist. I hope you enjoy!
1/2 cup I Can’t Believe It’s Not Butter!® Spread (melted)
1/2 cup brown sugar (firmly packed)
1 tablespoon all-purpose flour
1 tablespoon lemon juice
3/4 teaspoon ground cinnamon
4 cups tart apples (peeled and sliced, about 3 medium)
2 cups plums (pitted and sliced)
1 cup quick oats (or old-fashioned oats)
1/4 cup walnuts (chopped)
1/4 teaspoon ground ginger
1. Preheat oven to 375°.
2. Combine 1/4 cup I Can’t Believe It’s Not Butter!® Spread, 1/4 cup sugar, flour, lemon juice and 1/2 teaspoon cinnamon in large bowl. Add apples and plums; toss to coat well.
3. Arrange fruit mixture in 8-inch square baking pan.
4. Combine oats, remaining 1/4 cup Spread, remaining 1/4 cup sugar, walnuts, remaining 1/4 tsp. cinnamon and ginger in small bowl until well blended. Sprinkle crumb mixture over fruit.
5. Bake uncovered 40 minutes or until fruit is tender and topping is crisp and golden. Serve warm and, if desired, with ice cream.
