When I came across this recipe, I thought to myself, did I read that right? Reese’s Peanut Butter Cup chocolate chip oatmeal cookies. I had to re-read it several times to make sure I read it right! I am a huge fan of Reese’s Peanut Butter Cups. It is probably one of my favorite chocolate treats growing up and still love them today. I absolutely love anything that combines chocolate and peanut butter.
I’m not only a huge fan of peanut butter with chocolate, oatmeal is my favorite cookie. My go-to cookie when I go to my favorite bakery Levain Bakery in New York’s Upper West Side is always the oatmeal cookie. So, combining the two sounded like a match made in heaven.
The best thing about these cookies is they are easy to make in just a few minutes. It’s a very simple recipe and the cookies bake for 10 -11 minutes. Great cookies for peanut butter lovers and those with a sweet tooth. They are absolutely amazing to eat right out of the oven when they are still warm and the chocolate is oozing! YUMMMMM!
They are perfect for every occasion. I made them for my annual Super Bowl party, but they are great to bring to any party you are attending or having them at your house for a get together with friends. You can also be greedy and save them for yourself. I have been eating all the leftovers all week for breakfast. Hey, who said you can’t have cookies for breakfast!

1/2 cup butter softened
1 1/4 cup brown sugar
1/2 cup sugar
1/3 cup creamy or crunchy peanut butter
1 egg + 1 egg yolk
1 tablespoon vanilla
1 1/4 cup all-purpose flour or gluten-free flour
1 cup old-fashioned oats or gluten-free oats
1/2 teaspoon baking soda
3/4 cup Ghirardelli milk chocolate chips
1 cup Mini Reese’s Peanut Butter Cups chopped in half

Preheat oven to 325 degrees. Line cookie sheets with parchment or spray with cooking spray
Cream together butter and sugars for about 2 minutes.
Add peanut butter and stir. Add egg, yolk, and vanilla.
Combine flour, oats, and baking soda.
Slowly mix into the wet ingredients.
Add the chocolate chips and Reese’s Peanut butter cups and mix.
Using a large cookie or ice cream scoop, place 6 scoops, evenly packed into your scoop and release onto your cookie sheets and bake for 10 to 11 minutes.
