You can cut them into chunks or cut them more like french fries, it’s totally up to you! If you do cut them into fries, cooking time will vary depending on the thickness of the carrot fry. It’s a simple, delicious recipe that can be enjoyed throughout a busy work week!

Recipe Ingredients

These ingredients can be modified based on your preferences and level of spiciness you desire from these home fries. Here is what you will need to make these oven baked home fries.

  • Carrots: For this recipe, I used 2 pounds (about 8-9 medium carrots)
  • Honey: This is the most important ingredient. The honey caramelizes the carrots and really enhances the carrot’s sweetness.
  • Extra-virgin olive oil: Helps to soften the carrots and bring out the full flavor of the carrots.
  • Cinnamon: The cinnamon pairs great with the honey & carrots to bring a whole new flavor to this recipe!
  • Cumin: This earthy spice really enhances the carrot’s flavor and pairs well with the honey & cinnamon. Optional, but highly recommended!
  • Paprika: Optional, but just a little bit of paprika gives these carrots a nice rusty hue and gives these roasted carrots a deeper, enhanced flavor.
  • Salt and Pepper: It pairs well with the sweetness of the honey & carrots. These roasted carrots can be made with just salt and pepper, but adding cinnamon, paprika, and cumin to the mix really kicks the flavor up a notch!
  • Garlic: (Optional) Minced Garlic gives extra flavor to the honey roasted carrots.
  • Optional Spices: Parsley, or even cilantro/thyme leaves (for garnish), red cayenne pepper or red pepper flakes for a spicier version

The Directions:

These oven roasted carrots need to be prepped. If needed, cut off the tops. No need to peel, you can just wash them well and use a vegetable brush to get any rough spots off.

Step 1: Preheat oven to 425F.

Step 2: Cut carrots into 2″ cylinders. Cut any thick portions in half vertically to ensure all of the carrots cook at a similar rate.

Step 3: Place carrots in a large mixing bowl. Toss well with the honey, olive oil, cinnamon, cumin, (optional) paprika & (optional) minced garlic. Make sure to mix well to evenly coat the carrot slices.

Step 4: Spread them on a single layer on a sheet pan lined with parchment paper. Parchment paper is optional, but will be a lot easier to clean up afterwards than trying to get the glazed honey off of a bare sheet pan.

Step 5: Place the carrots into the 425°F oven and roast for 17-25 minutes. The carrots are done when they are fork-tender and nicely browned, but are not mushy.

Step 6: If needed, season to taste with fresh parsley or additional salt and pepper. Let cool for 1-2 minutes and enjoy (our family sure did!).

Tips for Delicious Oven Roasted Carrots:

  • Spread out carrots evenly in a single layer to ensure the roasted carrots cook evenly. If they are on top of each other or bunched too closely, they will take longer to cook. If making a double batch, feel free to use multiple sheet pans.
  • When cutting carrots, try to cut them into the same size to ensure they all cook evenly.
  • If you are using Olive Oil, don’t bake above 425F.
  • If looking to decrease calories, we have used half the olive oil and instead used avocado oil spray with great success!
  • Use this same exact recipe to make a delicious garlic parmesan roasted carrot! Simply ditch the honey and add 1/2 tsp garlic powder. Once carrot fries are out of the oven, top with freshly grated Parmesan!
  • If you don’t have all of the herbs & spices or honey, you can also make a delicious variation by only mixing with olive oil & salt & pepper. Simple, but yet incredibly delicious!
